Brief characteristics of the exhibit
- Herold is made by precipitation of milk protein from milk by sulphite action, acidification and whey separation. Fat in dry matter is 48%.
- It has uniformly creamy yellow color with a distinct edge. The surface of the cheese is colored depending on the protective coating.
- Herald consistency is homogenous, compact, solid, with many perforation the cut. It is characterized by a strong and solid edge on the cut. The surface of the cheese has a relief of straw basket.
- The taste is pure cheesy, typically milky distinctive, without foreign flavors and odors.
